Novozymes – the world’s largest producer of industrial enzymes – has launched the food enzyme product “Acrylaway HighT”. The thermoactive asparaginase developed by c-LEcta is used to reduce the levels of acrylamide in food; a substance considered to be a potential health risk. Acrylaway HighT is the first enzyme product available in the market that allows the treatment of new foodstuff categories like breakfast cereals at high temperatures. c-LEcta has chosen Novozymes as cooperation partner to commercialize its unique enzyme. The project now has reached the commercialization stage and the enzyme is available for customers worldwide to increase the safety of food products.
